It's so easy, you don't even have to have a recipe. Just cook some orzo (as much as you want) according to the package directions. Drain all the water. Drizzle with a little bit of extra virgin olive oil. Stir in some pesto (as much as you want-a little goes a long way). The pesto has olive oil in it but I found the orzo needs a little extra olive oil drizzled into it to make it stir better.
So to recap:
Cook (orzo)
Drain (water)
Drizzle (olive oil)
Stir (in pesto)

Mother Dear-orzo is a rice-shaped pasta. Pesto is kind of like a condiment/spread made from basil, olive oil, pine nuts and parmesan cheese and maybe some more things I'm forgetting. Of course that varies from pesto to pesto. Sure, you could mix in pesto to rice but try the orzo. Don't go buy any, though. I'll give you a box. I bought a years supply when I was out of town last time before I saw that our WM had it.

Yum. That looks good and like something I could actually do. Unless the orzo is tough to cook. But since you said it is pasta, and you also said drain the water, sounds a lot easier than rice or even worse, brown rice. I never get it right when it comes to brown rice.
ReplyDeleteI will have to try with some grilled chicken. ha - speaking of me cooking...I made cinnamon rolls this morning from a can. But they were pillsbury cinnabon cinnamon rolls. pretty decent.
